Abstract: In this paper, ¹³C NMR structral identification of natural sweetener obtained from the leaves of South American wild herb, Stevia Rebaudiana cultivated in Wuhan district is described. The result shows that the main constituent is still stevioside (13-0-[β-glucosyl (1-2)] -β-glycosyl-steviol). Solvent effect of C₅D₅N and D₂O on different parts of the molecule was observed.Methods and parameters of specific bands which can be used to identify the structures of these natural sweeteners were discussed.
