Abstract: Capsaicin, dihydrocapsaicin and their mixtures were studied by 1D 1H NMR spectra, 1H-1H COSY spectra, 1D 13C NMR spectra and DEPT spectra.The 1H and 13C chemical shifts were obained.A method based on NMR spectra was employed to determine the relative content of capsaicin to dihy drocapsaicin in natural capsaicins.
