DETERMINATION OF PLANT OILS BY 1H AND 13C NMR

Abstract: 1H NMR spectra of five kinds of plant oils and the 1H spin-lattice relaxation time T1 of CCH2C functional group have been obtained in this paper. The number of functional groups, the unsaturation degree, the esterification degree for each mole of oil have also been calculated. 13C NMR spectra of soybean oil and tea oil have been recorded. From these 13C NMR spectra, we have calculated the ratios of each functional group to methyl group, which agree with the results obtained by 1H NMR quite well, and the mole percentage of saturated and unsaturated fatty acid glycerides in the two oils.
